The Fiber Gap
Dietary fiber is one of the most important — and most neglected — nutrients. The average adult consumes only 15-18 grams of fiber daily, well below the recommended 25g for women and 38g for men. Only about 5% of Americans meet the adequate intake.
Two Types of Fiber
Soluble Fiber
Dissolves in water to form a gel-like substance. Found in oats, barley, beans, apples, citrus fruits. Benefits include lowering LDL cholesterol, slowing glucose absorption, feeding beneficial gut bacteria, and increasing satiety.
Insoluble Fiber
Adds bulk to stool. Found in whole wheat, nuts, beans, and vegetables like cauliflower. Benefits include preventing constipation, reducing diverticular disease risk, and potentially reducing colorectal cancer risk.
